THE PIZZA CALABRESE
INGREDIENTS: 600 gr. of flour, a nut yeast, 50 gr . olive oil, 500 gr . of tomatoes, 100 gr. tuna subt 'oil, 50 gr . anchovies, 100 gr . pitted black olives, capers subt 'vinegar.
PROCEEDINGS put the flour into a bowl, add oil and yeast dissolved in warm water and salt. Knead the dough and let it rise. Divide the dough into two unequal parts, the part will use more to line a large baking sheet. Cook the tomatoes seasoned with olive oil and salt. Chop apart the tuna in oil, and mix it with anchovies, capers and pitted black olives. Pour this mixture into the pan of tomatoes mix well and fill all the pan lined with pastry. With the remaining dough forms a disk and cover the top of the pizza, by joining the edges. Grease the surface of the pizza with a little oil and bake for 30 minutes.
